SALTED CARAMEL — MACARON FILLING & JAR VERSION A professional salted caramel recipe with reduced sweetness, developed for both stable macaron fillings and smooth jar caramel.

This caramel is based on a carefully balanced combination of sugars, cream, and butter, resulting in a glossy, creamy texture that does not crystallise and remains perfectly smooth. Natural vanilla adds depth, while Fleur de sel creates a delicate, refined salty finish.

The flavour is rich but not heavy — creamy, caramelised, with a clean and elegant balance between sweetness and salt.

  • Macaron filling — stable, pipeable, soft texture (with gelatine)
  • Jar caramel — smooth, flowing sauce (without gelatine)
